Matt's Famous Chicken Enchiladas
Jean's brother Matt issues the call that Matt's Famous Chicken Enchiladas are ready. Best enchiladas we ever had. Kirk couldn't move for two hours. The guacamole, frijoles, rice and sopapillas were great too as was the tapioca with banana caramel sauce.
Matt spent the afternoon in the kitchen cooking and we spent the evening on the sofa loosening our belts.
